Geometry can be treated a few ways in good stitching programs. The final print can be configured to provide a cylindrical view (true panoramic), rectilinear (under 180 degree V or H OAV) but ultra wide shots start looking strange and spherical projection for display in VR applications. The optimum set-up would have the mount rotating about the lenses nodal point but it's far less of a problem if there isn't a mix of near/far subject matter.
