OK, what I should have asked in addition is how does one set an

The Mac has this clever system where it tags each file individually, but as Kevin pointed out you can set up a permanent association for all files of a particular type. By default, a file will open with whatever application saved it. So double-clicking on one TIF might open Photoshop, while another TIF file might open Preview.

In some ways I like the ability to do it for individual files - I set all my big TIFFs to open in Photoshop, and smaller files in Preview which is much faster to open. Sometimes it also annoys me as I occasionally forget to change the association of a file I just resized, and instead of getting Preview I have to wait for Photoshop to start up. If I actually took more notice of the icon before clicking, I'd avoid that :)

Kevin's post explained how to set it up; you can also highlight the file and use the "get info" command (also works for multiple files). There is an option in there to set up a permanent association with just that file, or all files of that type.

There are plenty of other things you can do to open a file in Photoshop without changing the associations, but that's not what you asked about so I won't go into it.
