Longest lens you can get/afford.  For propellor-driven aeroplanes, use 1/125 
second and adjust aperture.  Use up to +2 exposure compensation, depending on 
the sky.  Monopod is useful, unless you luck into a 600/4, in which case a 
Sachtler tripod with fluid head is useful to have around.
