BTW: The limits to this operation is probably the thing with the FOV, since the software will try to correct the wide angle distortions. If I don't use a wide angle lens, this should probably not be a problem.

That's not much. But if I have to, I just rotate the images in Photoshop and make the panorama as if it was a horizontal panorama. I have made panoramas with 30 images. The limitsw here are the amount of RAM ypur computer can use. If I had 1 or 2 GB RAM I could probably make panoramas from 60-100 frames.
