This is one of those "more than one way to skin the cat" problems.

More practical - if she has a stereo, or access to a stereo that has
phono preamp and line-level outputs, she can get a cable that will
plug the left/right line-level outputs on the stereo preamp/amp, and
plug into the line input on the soundcard in her computer. Once she
has that hooked up, it's simply a matter of finding a program to
record the audio coming into the sound card (I believe there are a
bunch of them out there, some might even be able to take out surface
noise from the record).

You have reminded me that I should try to rip my old George Carlin
records to MP3...
