Despite being a vegetarian, your receipt sounds delicious and I enjoy

You're right, the stuffing is the best part. My stuffing is a mixture
of bread, cornbread, wild mushrooms, pork sausage, onions, celerys,
cherries, white wine, butter, chicken stock and herbs. It cooks
inside the turkey, and I cook some extra in a casserole pan. Very
good. I've been working on the recipe for 35 years. I've also studied
the cooking of the bird. Last year Gourmet magazine tested about
twenty different turkey cooking methods. To their surprise -- and the
surprise  of everyone else -- the winning method was one where you do
nothing. You jsut put the turkey in the oven, you don't baste it, you
don't tnet it, you just blast it at 450 degrees for about two hours.
(That's for an 18 pound bird) I tried it this year, it works.
Amazing. Best turkey I ever had. I did brine it in the garage for
three or four days, but the high temp blasting is definitely a
breakthrough in turkey cooking science. And in the US, it is a
science. Kill those big birds and cook them!! :-))
