Years ago we had a family friend who was an exterminator in NYC. He told us what went on in some of the "best" restaurant kitchens in town. A number of years later I had an opportunity to inspect three or four restaurant kitchens in Berkeley ... a lot _does_ go on that the customer is better off not knowing ;-))
