Chimping is looking at the picture you just shot on the back of your camera. I am intimately acquainted with the process, I assure you I have missed many pictures because of it. I don't think it matters if you're "exposing to the right" or just saying "ooo pretty." ;;)
The 18% reflectance thing is why folks invented the zone system. And the system works just fine with digital too if you have a meter that is reliable and you take the time to learn it. Then you can instantly choose the exposure you want without taking your eye from the finder.
