I'm an idiot. All this time I've been blabbering about how iPhoto doesn't do IPTC captions.
Turns out I was wrong. When exporting, there's a little checkbox that will add your title, caption and keywords to the IPTC fields of the image file. Granted, its functionality is very very limited, but probably all I need.
