Matthew,

You can assign any combination of settings (including white balance) to the 
"User" spot on the top dial.  See page 167 of the manual.  That won't let you 
store a bunch of WBs, though; only one.

I always shoot RAW.  In tricky light I toss a black/grey/white card into the 
scene, and take a shot.  In Lightroom I use the eyedropper on the image of the 
card, and set all the pics from that series to the resulting WB.
