Write the text in MS Word, but do a "save as" and save it as a "text only" file before dumping it into the blurb template. You'll then do all the formating in the blurb template. I write for numerous publishers, and that's the standard procedure. Of course the publishers use InDesign or Quark rather than a template like blurb, but it amounts to the same thing.
