I use Matte papers and the Matte Black ink almost 100% of the time
(only time I switch to Photo Black is when I'm using Epson Exhibition
Fiber Paper, the only non-matte surface I like). All my printing is a
color-managed print workflow from Lightroom.
If I have Photo Black in the printer and am printing to matte papers,
I use the profiles with "-PK" extensions on the names for Epson
papers. Results aren't as good as using Matte Black ink but better
than if you didn't. For more expensive, third party papers, I use the
recommended profiles and inks.
I've not used the Harman papers or profiles as yet, have a sample pack
i need to try one of these days. But I would follow their
recommendations (at first anyway) and batch up enough printing to be
worth changing to the correct ink.
