Having "more" lenses doesn't mean you have to carry them with you, although, when Erwitt traveled on assignment he usually carried his full kit - two bodies, misc. items, and all his lenses from 17mm to 300mm. I guess it depends on what you're photographing and what the circumstances are.
I agree that many times carrying too much equipment gets in the way of the photographic process - it certainly does for me. Usually I carry no more than two bodies and three or four lenses.
