well, you can certainly use Mutt on Macs; MacPorts (was DarwinPorts) is probably the easiest way to get it; probably enough info on this page to get you going:

for GUI apps, i'd take a close look at Thunderbird, which may well have a mode or plug-in like you want; i use Thunderbird, Mailplane *and* Mail, the latter only for archiving; in Thunderbird i mainly use filters into different IMAP mailboxes, then i use View/Sort By/Threading and keep threads collapsed at most times

something approaching your desired behavior is that one can "star" threads and then use "go to next starred message" as one way to selectively read through a mail box; lots of other options -- it's the richest GUI email client on Mac
