there are numerous other risks — servers can be too slow or bandwidth-limited, some sites don't allow such linking or have content that's only viewable when logged in

pinterest works around all of these, as well as the deletion risk you mention, which is particularly high for some types of pinterest images (e.g. from online shops whose stock changes frequently)
