I use my Fuji X10  in black and white only mode quite often.

Simples: I shoot high quality jpegs on a couple of custom settings (C1
and C2) with C1 high ISO harsh highlights, high noise, contrasty.
Perfect Knarf territory. C2 is low ISO and noise, landscapes etc.
Shooting the jpegs means I don't have a choice - concentrates the mind
and is just like having black and white film in the camera.

Of course, with a twist of the dial I can change to some colour
settings, but the point is I'm thinking black and white.
