there are several ways to stream to Airport Express or Apple TV without using iTunes; some of them are built-into OS X 10.8 and iOS 6, some are software based like Airfoil, Porthole, etc. (and some run on Windows); i believe you can even stream from NAS units, but i don't know the particulars

generally i would recommend an Apple TV instead of Airport Express, as it will stream video as well as music, it will provide a digital signal (assuming your receiver has a good DAC), and it provides an interface to choose what you want to play (which is an advantage if you are attempting to use it without iTunes)

however for William's specific purpose, the disadvantage of the AppleTV is that you'll have to convert audio from the optical or HDMI outputs to get it into vintage gear; Airport Express has a built-in DAC, so the cabling is easy but it''s not a premium DAC; Apple TV is also not a wifi repeater like Airport Express (i have both, and switched to using the AppleTV for audio as well as video)

the streaming protocol for both Airport Express and Apple TV is Apple Lossless; max for Apple TV 2 & 3 is 16-bit, 48kHz
