Sounds very cool! Personally, I love those kind of situations where you have to think on your feet, act fast and get it right - this probably explains why I was a motorcycle racer ;-)
Shooting Raw is definitely the way to go for this: With today's software a conversion of two or three shots will take just a minute or two and you'll not only get a better jpeg immediately, you'll have a better starting point for future, higher-quality prints.
