When your iPhone is attached to Mac and iTunes is on, click on the iPhone icon in the lefthand column within iTunes. Note the tabs along the top of the display window. Under photos tab, identify which (if any) photo folders you want to be synched with the phone. Work your way through the tabs to find where to turn on/off music synching, turn off autosynch-when-phone-is-connected, etc.
