Walt, In my professional life (a pediatric oncologist with a particular interest in connective tissue tumors) I have dealt with lots of amputees. For many years I took our teen and young adult patients with amputations skiing for a week every winter, and shot the lessons, races, and annual dinner-dance. I also shot the wedding of a good friend with one leg who uses crutches.
I have learned that people with disabilities are very sensitive to perceived patronization. Your friend knows she has a physical difference and doesn't shrink from displaying it. So my suggestion is: Don't beat around the bush; just ask her "would you like me to crop out your amputation?" I would be very surprised if she says "yes". I think she'll also be pleased that you are forthright about it.
