iTunes will easily convert it's music library into MP3 versions -
although doing this creates duplicates - which could easily by sorted en
masse after conversion and copying off elsewhere, and deleted.

I have some sound files that I sometimes make an MP3 version of, copy it
straight onto my desktop, and then delete the MP3 version in iTunes.

Personally I don't make many MP3s except for personal listening, so
don't know of a bulk method other than this.
