For RAM intensive apps like Photoshop, the more RAM the better. LR is a bit less RAM intensive—through memory usage modeling, I've never seen it consume more than 2.5G RAM in any operations by itself—but is much more critical on disk space utilization and read/write performance once you have enough RAM to keep it happy. I always maintain a minimum of 100G free space on the startup volume and site the Lightroom catalog folder there, with the photo file repository on a fast volume connected via the fastest available protocol, for best performance.
OWC memory has been a little problematic for me. I bought 16G from them for the previous Mac mini I had and found it caused display jitters. I switched to memory bought directly from Crucial (crucial.com has a RAM selection tool) after that and have not had a single problem with it.
