I can only answer one of your questions:  yes, the Metz 40 MZ-2 will work with the 6x7 
body.  However, you need to use the standard foot with the Metz, not a TTL adapter 
foot.  Luckily, my flash came with both.  You can order the standard foot, and you can 
change them in seconds.  Since it's just a PC connection, you have to set the film 
speed, aperture, and zoom on the flash manually, keeping in mind the 6x7 focal length 
difference, e.g. for the 105 lens, set the zoom at 50mm, and set the flash on Auto, 
unless you're lucky enough to have a 67II,  which has TTL.  With the 1/30 sync speed, 
you won't be doing much outdoor flash work, unless you have a leaf-shutter lens.

Since I've been unable to find a wood grip at a price I like, I use the Stroboframe 
RL-2000, which can be adjusted to fit the 6x7, the MZ-S, or the MZ-5n, with or without 
battery grips.  It's pretty bulky to carry around every day in the camera bag, so I 
picked up a Kaiser straight flash bracket for $4 at a garage sale.  You also need a 
hotshoe adapter with short PC cord.  Kaiser has one for $17Cdn.

Stay away from most light-duty handle-type flash brackets, as the camera is so heavy 
that if you try to hold the kit by the bracket, it will bend.  The straight bracket 
supports the flash, but doesn't have a grip.  The Stroboframe brackets are heavy-duty, 
and don't have a problem.  The outfit weighs around seven pounds, but it sure looks 
impressive.
