I don't know iOS mail but in macmail it's mail->preferences->composing-> 
message format=plain text

Avoiding Lookout is generally a good idea.


My macmail grief is that it keeps insisting on "correcting" my spelling rather 
than just advising that it thinks  it's wrong with a red underline.  That is 
supposed to be on OS setting under system preferences->keyboard, but macmail 
seems to be ducking well ignoring that.
