I can highly recommend dovecot. If you run OpenNTPd you are unlikely to experience the mentioned time problem (which would upset more then just your POP3 daemon...). I've found that dovecot is good at rebuilding index files where required without screaming as if the world is ending and giving incorrect message read indications (yes Cyrus, that means *you*) and having a nice, lightweight authentication layer that you can use to for SMTP authentication (dovecot-SASL) as opposed to the full-fledged SASL layer that most others will lock you into. You can also easily upgrade to IMAP later, should you ever want to.
