I've always been pretty lazy in my choice of POP3 server, going with whichever was suggested by whatever How-To I was reading at the time :-)

That means I've mostly used Courier and Dovecot, with Courier being the one we've settled on more or less by default.

In all my time dealing with mail servers on and off, the SMTP side has been the one I needed to work at, not the POP3/IMAP. They mostly seem to just "work". But I'll add my vote to Courier since its what we use and without problems so far.
