Counter-strike, diablo ii, etc.  It doesn't quite matter, they are the 
popular ones today.  Virtually every i-cafe has them in their 
machines.  You might also want to consider "Unreal Tournament."

But what would really make the difference is your hardware.  Be sure that 
everything -- from your machines to your connections (netcards, cables, 
hubs, etc) -- would kick some butt.
We set up an i-cafe a few months back ourselves, with serious 
hardware.  It's the key.  Hardware choice (read: ASUS specs) is definitely 
critical.  And after a few days, the shop has been on 24 X 7.

Another tip:  Noticeable pixels are definite no-nos.
