I suppose you'd want to block connections to the following servers:
And in the case of MSN, gateway.moswest.msn.net.
You'll have to visit the Yahoo and MSN sites to get the latest list, though.
That said, I think this is the wrong approach. Several other chat services are available. And there are also times when these chat services can be quite useful.
Better to institute a corporate policy with regards to use of these services, monitor accordingly, and impose sanctions against violators.
