If you're familiar with RHEL, then you've already used CentOS

If you intend to do RAID for your company, do it the hardware way -
the initial cash out might be expensive but you will definitely
appreciate it when it runs. It rarely fails. I used to handle 2 units
of classic Dual Pentium Pro HP Server with a Segate RAID controller
and after 8 years it still runs and keeps on going. They maybe very
old servers but very very reliable.

This would depend on the RAID level of your choice. Most of the
deployments I did were on RAID 5 so I always have a minimum of 3
physical drives. You can still do RAID if you have less and greatly
depends on your needs (mail servers for example, have very little use
of RAID 5 IMO).
