So here's the ones on my list:
 
1) Knoppix
2) Ubuntu Live
3) D*mn Small Linux
4) Puppy Linux (based on Busybox) - not really Live CD as it somehow requires a hard disk to write a persistent user file system, but works very much like one
 
Care to add your favorites?  I'm not looking for a comprehensive list of every Live CD version ever made, just the ones that you use.
