Because Debian testing is _not_ a supported distribution by the Debian  
maintenance/security team. It moves periodically every couple of weeks, and 
could break at some points in time. this isn't really acceptable in server 
deployments where you need rock-solid stability. Unless you're really willing 
to use an unsupported distro and rebuild everything, using such is suicide 
for production deployments.
