you don't have to download the 17 iso's, just download disc 1 and if you have a fast internet connection you can install the applications you want via the repositories. afaik the install process of debian differs from the latest ubuntu 6.06, and yes it is possible to install server type app's, you can choose from the menu as to what type of server you want and unlike ubuntu which installs everything including services that you don't want.
