I've heard a lot of voices agreeing to not using Ubuntu on the server (which somewhat agrees to my stand), but it would be great if someone gave a differing view? Or is it a general concensus that Ubuntu on the server isn't really yet as mature as we'd like?
I think a lot of those saying this is done prematurely. LTS is only 4 months old and just got a point release. Since LTS is supported for 5 years on the server, we will probably see more visible deployments and case studies during this LTS support cycle. So in summary, in my opinion, LTS is Ubuntu's acid-test for aiming to be at the "enterprise-level" . We've yet to know if its really good or not.
