You can find whitepapers, tutorials, documentations, etc. at Xen's website at http://xen.xensource.com/ and you may also ask Google all about Xen HVM. Basically, there are three (3) types of Xen networking and these are the [1] bridged (the common one), [2] router, and [3] NAT (which I am using). Also, in order for you to install other OS on your Xen dom0 (host OS), you need to consider the full virtualization or the HVM support on your setup. Take note that HVM support relies on the type of processor you have and the chipset of your motherboard. You can search for it at the Xen's website on the supported processors and motherboard chipsets. For AMD based processors, as long as you're using AM2 based processor and motherboard, there's a high chance that you can do a Xen HVM.
