Do you mean doing the backup while the VM's are running?  I'd be interested in 
it as well.

What I do currently is on a set time all VMs are powered down and a backup 
script runs under the host OS that either tar.gzips all folder under 
/var/lib/vmware/Virtual\ Machines or cp/scp them somewhere.
