Yes it can be done.  What really matters are your video cards.  Almost all
kinds of monitors can be used.  And it doesn't really matter what positions
the monitors take.  They could all be stacked up one on top of the others if
you want.

Yes, you could have one giant screen if you want.  BUT, there are several
issues to be considered.  For example, some window managers do not know of
Xinerama yet.  Others support it but window behaviour is not yet perfect.
In some WMs, if you click on the enlarge button, it maximizes but only up to
one monitor.  I do not yet know of a window manager that utilizes all
monitors when enlarging windows (you could try the dev versions of
Enlightenment.though).  Other issues are deadspots and edge resistance for
each monitor.
