Hi,

for starters:
http://www.openssl.org is the library you need for SSL and SSH.

http://www.openssh.com is the best SSH to use.  Some distros like Red Hat 7
already include this.  The only tweak I find necessary is to disallow root
from ssh'ing in.

For SSL-encrypted POP, I use http://www.stunnel.org.  It listens to port 995
and forwards connections to 110.  I use it with Outlook 2000.

If you're using Linux on your desktop, no need for stunnel or similar, just
do SSH port forwarding.
