1) re-create user data on the new server

2) create an MX record with a higher value in your DNS pointing to the new
server

3) swap the MX values (new server = lowest MX value, old server = highest MX
value) -- this would make the new server as your preferred mail exchanger
but still have the option to switch back to the old one should anything bad
happen.
