You can search in the internet for email toasters which provides some easy to setup installation. e.g bill shupp qmail toaster and the like.

-> decide what mailstore technology to use: plain mailbox, courier/maildir, or cyrus? -> decide what MTA to use: postfix, or qmail? (notice i did not even mention sendmail) -> decide what authentication database to use: ldap via pam, sql via pam, sasl via pam, or plain password/shadow -> decide what other features to include anti virus screening? anti spam screening?
