How about embedded systems? 

Second to servers, this is the field where there has been an explosion
of Linux as a viable platform.

Some possible sub-topics:

*The Familiar distro -- Linux on an IPAQ.
*Cross-compilation using the GNU toolchain.
*Maybe we can invite manufacturers of SBC (single board computers) 
and other embedded hardware platforms for product demos. (ex. VIA EDEN
boards, Octagon systems, Linux PDAs in korea and europe).
* Reverse engineering  hardware to run Linux (or add new capabilities)
-- XBox, PS2, LinkSys Wi-Fi Routers, etc.
* There are a lot of other products that use Linux -- see
http://www.linuxdevices.com
