This is only for the cook codec which is the latest codec. No way for user to set the flavour - I think it chosen by the broadcaster as well as sub-h and sub-w. The main factors in the datarate of the stream are sub-W and sub-h. Given a certain datarate I think the broadcaster then chooses the "flavour" to suit the type of audio - mixed, music, voice.
