At the moment I have no further ideas what to do.
I will give some summary so that if anyone else tries he/her can use my
experiences:

First of all: as mentioned by philippe the player needs encryption. At
least with the newest version of the plugin the other settings do not
seem to make any difference.

On the NAS (LMS and plugin) it does not work.

On my ubuntu box (desktop computer, LMS and plugin) it runs but it is
not reliable. And as soon as I try to sync it with another player it
mutes (but the other player starts almost exactly at the point where the
GGMM E5 stops so there seems to be some type of sync).
I can run LMS from the NAS and the plugin on command line on my ubuntu
box and the behaviour is the same.

I picked binary and config file, copied everything to my fhem (home
automatization) box which also runs ubuntu.
So I used the same config file which worked on the desktop box and also
the same switches for the running binary.
Now when I turn on the player from the LMS menu it works for perhaps
half a second and then mutes. This can be reproduced quite well.

All three boxes (NAS, dektop and fhem) use the same binary
(x86-64-static)

Android app "Airplayer" works with all variants (using encryption).

The GGMM 5 still does not show the metadata, it does not matter whether
I choose the option to send it in the config (the status can be polled
by http command).
But this is also the case when I use it from the desktop computer and
there it sounds at least at ~ 30% of the tries.

For me it seems to be some timing problem (tried different buffer size
without success) or perhaps something with the open (or not open) ports
of the different boxes?
Which ports should be opened?

I did not manage to ssh or telnet the player, from portscan I know that
it runs some kind of linux.
Best thing would be possibly to hack it and install suqeezelite...

It drives me x&%ยง, I managed to run squeezelite even with an old Chumby
and on a old Smart-Q7 linux tablet and to sync them somehow with the LMS
but this player won't ;-)
However its sound is very good specially considering the size!
