I have found a way to reproduce this behavior. I just tested my network with Iperf, sending large bursts of data around with very large buffers. The music only stopped once briefly for like a second. Squeezelite-X was then frozen and not updating. The browser connection showed the correct music playing. I then switched to classic skin and back to material and it worked again. This could be related, maybe my laptop goes into a deeper state when left alone, and there are minor network disconnects. Once this happens, the app stops updating.
