One thing I find annoying about plugin updates is that when I see there are updates available on the plugins tab I sometimes do want to postpone one of the updates so I deliberately don't tick the box for that plugin but it gets updated anyway when the server restarts. So effectively there is no way to opt out of a plugin update even with automatic updates turned off.
