There is an option called "Write ratings to slimserver" in the "Rating Tag" scanning module which controls this, the same option also exist in the "Amazon" scanning module but it's then called "Update slimserver ratings". If these options are disabled, the ratings will just be written to the Custom Scan tables so you can use them with Custom Browse or SQL Playlist, but they won't be visible in the TrackStat user interface.
