Tom,

I think you mixed up iPeng 1.0.5 (the iPhone app) and the plugin.
How did you get iPhone.app on your computer??? Through iTunes?
iPeng 1.0.5 is supposed to be installed through the App Store and works
without any further modifications to SC.
It installs it's own icon on your iDevice and you do NOT have to use
Safari. 
iPeng 0.5.3 (from
http://penguinlovesmusic.de/ipeng-the-iphone-skin-for-squeezecenter/)
is a plugin to be installed in SqueezeCenter and used through Safari.
If you've got a recent version of SC, you'd best install it through the
plugin installer (Settings->Advanced->Extension Downloader), but you'll
have to remove all iPeng data from ...Plugins/ first.
