iPeng works a bit different than the controller.
The controller is typically logically connected to a single player and
moves the player along when you switch to another source.

iPeng, in contrast, is connected to a server and can control multiple
players almost simultaneously.
This means, you will have to switch the player to SN or to SC
independent of iPeng itself, that's what the "globe" icon is for.
So the process would be to first move the player to the other source
and then switch to the source.

I agree this is currently not completely user friendly and it will
become simpler in 1.2 (the current plan is that iPeng will ask you to
switch players, too, when changing sources).

On "Softsqueeze 2", that's a second player. You can have many players
connected to one server and on that screen you can get an overview over
these and have some direct control over them.
SoftSqueeze is the software player that comes with SqueezeCenter.
