What are you running the server on? How many files are in your root music folder? You might have some problem with certain files in the music folder. What happens when you browse by Music Folder is that the server tries to re-scan that folder. If it's being held up or slowed down while this happens it can either delay the response a lot (so that you might not even get a result on first try) or even crash the server. This is not iPeng related, though, it's generally how "Browse Music Folder" woks in Squeezebox Server, I would expect the same behavior if you browse there directly from the Squeezbox or the web interface. You could have a look at the server.log or scanner.log to get any clue about which file is affected.
