In your situation the audio stream has hairport, a named pipe, Pulse, Pulse/alsa emulaton, arecord and LMS. Each stage has opportuity to buffer and also possible block waiting for input. You should simplify - try to get hairport to stream directly into LMS (i.e. hairport replaces ecasound/arecord). IIRC It has been done by another users.
