Apple LocalTalk Bridge (aka LaserWriter Bridge) is what you are 
looking for.  You can DL it from Apple somewhere...  It's 
unsupported, though, so you won't find much in the way of 
documentation.

Download LocalTalk Bridge to your Wallstreet.  Install the control 
panel.  Use AppleTalk control panel to set the connection to 
"Ethernet."  LocalTalk Bridge automatically "bridges" between 
whatever AppleTalk connection you select and the built-in Printer (or 
Printer/Modem) port.

In "public" mode, ethernet clients can see LocalTalk clients.  In 
private mode, they cannot.  LocalTalk clients can always see Ethernet 
clients.

As for Question 2, my computer is simply set (AppleTalk and TCP/IP) 
to Ethernet Built-In, or something like that.  You should upgrade to 
at least System 7.5.5, by the way.  7.5.3 is buggy.
